This week, we're looking at some fun recipes for Valentine's Day that will leave you with lots of time to otherwise enjoy the day with your partner or other loved ones. We begin with a versatile main course that is equally at home for any meal. So whether you are looking for a cheerful Valentine's Day brunch or a candlelit Valentine's Day dinner, these tender crepes filled with smoked salmon, sautéed shallots, and creamy goat cheese (chevre) are sure to bring smiles to the meal.
If you aren't a fan of goat cheese (chevre), consider using a different creamy cheese. Whipping blue cheese, feta or even cream cheese can give a similar texture with different flavors. I opted for big chunks cold smoked salmon for filling too. You'll note that I do not provide amounts for the filling. Pick what works for you and whoever is dining with you. And, as you might guess, you can mix up the fillings entirely. If you have a gathering on Valentine's Day, you could even provide several different filling options and let guests build their own versions of crepes for themselves.
As filled here, though, my favorite accompaniment is a simple salad of Boston lettuce and sliced mixed cherry tomatoes. The color and freshness is a nice contrast to the crepes and the flavors play well together. You could also serve them with a selection of fresh fruit. However you choose to serve them, you can pat yourself on the back for making a delightful meal for Valentine's Day in about 15 minutes and I think we can all agree that that's something to love. Smoked Salmon and Chevre Crepes
- 1 cup all purpose flour
- 1 cup milk
- 2 eggs
- 2 tablespoons melted butter
- Softened goat cheese (chevre)
- Everything bagel seasoning
- Sautéed shallots or red onions
- Smoked salmon
In a large mixing bowl, combine the ingredients for the crepes and mix well. Gently but firmly tap the bottom of the bowl on the counter to get the extra air bubbles out of the batter before proceeding.
Heat a small non-stick pan over medium-low heat with some melted butter to coat the bottom.
Pick the pan up off the heat and scoop ¼ cup of the batter onto 1 side of the pan. Swirl the batter around to coat the whole bottom and place back on the heat. Cook for about a minute or so until it has firmed up. Flip and cook the other side for about a minute as well until golden.
Once your crepes are made and your ready to fill, start out by spreading a thin layer of goat cheese on the inside. Sprinkle the everything bagel seasoning on to taste, and layer the sautéed shallots and smoked salmon on top down the middle. Wrap each side of the crepe over the salmon to make a little sleeping bag with fillings tucked inside. Serve with a simple salad or sliced fruit.
