Simple Grilled Salmon

There's no denying that fish on the grill is fast and easy. In a month devoted to long roasting times and fussy dishes, this month's offering is a welcomed treat. A generous portion of salmon is seasoned and grilled until perfect.

If you want, you can also broil the salmon, although there's something rather fun about going against the traditions of the season and firing up the grill. I highly recommend making it a bit of a seasonal fusion dish by serving what seems like a summer dish with the perfect autumn pairing of mixed roasted root vegetables and a glass of your favorite white wine. There's a lot to be thankful for this month!

Simple Grilled Salmon

  • 1 large salmon fillet -- about 2 lbs.
  • 1 tsp. smoked paprika
  • 1 tsp. kosher salt
  • 1 clove garlic -- minced
  • 1 tsp. crushed rosemary
  • 1/2 tsp. freshly ground black pepper
  • Cooking spray
Prepare a hot grill. Meanwhile, place the salmon fillet on a sheet of aluminum foil and fold up the edges to keep it from sliding off. Sprinkle the salmon evenly with the seasonings and spray lightly with cooking spray. Transfer the fish to the prepared grill and grill for about 10-15 minutes or until it flakes easily with a fork. Slice the salmon into sections and serve alongside roasted vegetables or with a side salad.
  • Yields: 4-6 servings
  • Preparation Time: 15-20 minutes
