15 Minute Vegetable Lo Mein

When you are tempted to call the pizza place for delivery because you just don't have time to cook, stop for a moment and consider your options. With a few choice ingredients on hand, you can have dinner on the table in less time than it takes to wait for a greasy pizza.

Next time you go to the grocery store, make sure a package or two of prepared fresh stir-fry vegetables is on your list as well as some bottled Asian sauces and some lo mein noodles. Then, the next time you're strapped for time, give yourself 15 minutes and you will have a hot, healthy dinner on the table! Planning ahead is a truly beautiful thing!!!

15 Minute Vegetable Lo Mein

  • 1 bundle buckwheat lo mein noodles
  • 2 T. olive oil
  • 2 cloves garlic
  • 1 lb. prepackaged fresh stir-fry vegetable blends
  • 1/3 c. hosein sauce
  • 1/3 c. Szechuan barbecue sauce
  • 1 T. Thai chili-garlic paste
Fill a large pot with water and bring to a boil over high heat. Cook the noodles according to the package directions.

Meanwhile, Heat the olive oil over high heat. Add the garlic and stir fry until fragrant. Add the veggies and stir-fry until crisp-tender, about 8-10 minutes. Add the remaining ingredients and the drained, cooked noodles. Toss to coat and serve immediately.
