Fresh Fruit with Mascarpone Crème

If chocolate bunnies and jelly beans are haunting your efforts to get trim for the upcoming summer months, you need look no further than your produce section for a welcomed and healthy treat for ending your dinner plans. A wide variety of colorful, fresh fruit looks beautiful on a plate and if you want to dip it in something, instead of indulgent chocolate, consider a dip made from mascarpone cheese ... a rich Italian cream cheese.

This dip is simple to make and a little goes a long way when you're serving it with fruit. The extra bite from the candied ginger gives it a nice twist and you can serve a wide array of fruit with it. Instead of insisting on a list, simply go to your grocery store and see what looks good to you. Everything from apples to mango to kiwi will go nicely with this simple dip. So enjoy fresh fruit and keep the chocolate bunnies to a minimum and you will be well on your way to summer slender!

Fresh Fruit with Mascarpone Creme
  • 3/4 cup mascarpone cheese
  • 2 Tbsp. honey
  • 1 Tbsp. Crystallized ginger, finely chopped
  • Assorted fruit
In a food processor, combine the cheese, honey and ginger. Process until smooth. Serve with sliced fruit, such as apples, pears, strawberries, pineapple, etc.
  • Yields: 4-6 servings
  • Preparation Time: 5 minutes
