Welcome to the October issue of Seasoned Cooking. Starting this month, we’re on a mission to convince you to disagree with Mr. Nachman. We’re offering a three part series on the regional cuisines of India, written by cookbook author, Monica Bhide, and brought to us courtesy of The eGullet Society for Culinary Arts & Letters. In the first installment, you will get an introduction to India and its history, as well as several of the cooking styles adopted by certain regions, or states. We hope that you enjoy the series and it encourages you to familiarize yourself with the delightful cuisines native to India.
In addition to the Indian series, we’re taking a look at a lot of autumn themes this month. We begin with Phil’s International Flair and a stick-to-your-ribs recipe for Chicken and Dumplings. With cooler weather on the way, it’s sure to inspire you. In the Ingredient SpotLight column, mushrooms take center stage. Enjoy them as many varieties come into season. Also, the Kitchen Focus column takes a look at tailgate parties and offers some unique options for your football feasting. And, of course, it wouldn’t be fall without a look at pumpkin desserts. The Happy Endings column offers us a simple and tasty recipe for Pumpkin Cupcakes to enjoy all season long.
We’re also presenting an article that’s near and dear to our hearts. This month’s Health and Fitness column focuses on prostate cancer and how it affects both men and women.
