Ultra-Easy Ice Cream Sandwiches

As a kid, ice cream sandwiches -- with their creamy vanilla centers and mushy dark chocolate cookie ends -- were a special treat at my house. Almost always eaten on the porch or front yard -- we were too messy to be allowed in the house -- they almost always were melting well before we reached the end!

Summer is all about memories like these. And it's also about making memories like these! Why not take it one step further by having your kids help you make your own ice cream sandwiches? You can opt for the traditional combination of vanilla ice cream and chocolate cookies, but why not mix things up a bit with new combinations featuring your favorite ice cream and cookie flavors? One of my recent favorites is a thin dark chocolate cookie with cherry-chip ice cream pressed between and mini-chocolate chips pressed into the outer edges of the ice cream. It's like a chocolate-covered cherry ... only better!

Use what you've got on hand and your own tastes to put together ice cream sandwiches that will have your kids telling their grandkids about them ... hopefully while making their own ice cream sandwiches with them! After all, it's what summer is all about!

Ultra-Easy Ice Cream Sandwiches

  • 1 pint of your favorite ice cream
  • 1 dozen chocolate chip cookies -- or any cookie that strikes your fancy
  • 1 c. assorted "dippings" -- mini-chocolate chips, jimmies, chopped nuts and graham cracker crumbs are some favorites
Soften the ice cream by letting it sit on the counter for about 5 minutes. Carefully scoop a small amount of ice cream onto six of the cookies and press the other six cookies onto the ice cream to make sandwiches. Roll each sandwich into the dippings of your choice to cover the ice cream. Return the sandwiches to the freezer for at least an hour before serving.

For a fun treat, make several different kinds with different types of ice cream, cookies and dippings!
